With Rodrigo González and Efraín Rebolé leading the pairings, and Oliver Alayón behind the signature cocktails – all recognised figures across the Canary Islands – the KENSEI experience is elevated into an art form, where each creation exists in quiet harmony.

Efraín, Front of House Manager and Sommelier, brings an international trajectory shaped in London, where his passion for wine first emerged. This foundation was refined through formal studies in oenology and sommelier training, and further defined by his work with projects such as Kiki in Santa Cruz de Tenerife and the restaurant Kabuki in Meloneras. Since 2025, he brings to KENSEI a precise and elegantly measured vision of service.
